 Good Friday is when Roman Catholic Poland fasts... to the aromas of stewing traditional biała kiełbasa, roasting meats and pâtés, baking baby, mazurki and cheesecake, and while boiling (and colouring) dozens of eggs for the basket and for the table. Agnieszka Bielawska and Elżbieta Krajewska consider.
